Greek Chicken


Serves 4

I love the tang of lemony, garlicky Greek chicken. This recipe does not disappoint.

What you need

  1. 4 skinless boneless chicken breast halves

  2. 1/2 a cup of olive oil

  3. 3 cloves of chopped garlic

  4. 1 tablespoon of chopped fresh rosemary

  5. 1 tablespoon chopped fresh thyme

  6. 1 tablespoon chopped fresh oregano

  7. 4 lemons (2 juiced, 2 cut in half)

What you do

  1. Pound the chicken until it's uniformly thin

  2. In a glass dish mix olive oil, garlic, rosemary, thyme, oregano and juice of 2 lemons juice.

  3. Place the chicken pieces in the mixture and cover.

  4. Marinated the chicken for 2 days, or at least overnight.

  5. Preheat the grill for high heat.

  6. Oil the grill grates well

  7. Cut the remaining 2 lemons in half

  8. Grilled the chicken for 3 1/2 minutes per side.

  9. Discard the marinade.

  10. Place the 4 lemon halfs fruit side down on the grill and serve with the chicken.

Tips & tricks

  1. I garnished the platter with the grilled lemon halves and sprigs of fresh rosemary.

Grilled Sausage with Potatoes and Green Beans

"An old crock-pot favorite ready for the grill."

Prep 25 m ~  Cook 20 m ~  Ready In 45 m


  • 3/4 pound fresh green beans, trimmed and halved
  • 1/2 pound red potatoes, quartered
  • 1 large onion, sliced
  • 1 pound smoked sausage, cut into 1 inch pieces
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon vegetable oil
  • 1 teaspoon butter
  • 1/3 cup water


  1. Preheat an outdoor grill for high heat.
  2. On a large sheet of foil, place the green beans, red potatoes, onion, and sausage. Season with salt and pepper, sprinkle with oil, and top with butter. Tightly seal foil around the ingredients, leaving only a small opening. Pour water into the opening, and seal.
  3. Place foil packet on the prepared grill. Cook 20 to 30 minutes, turning once, until sausage is browned and vegetables are tender.

Seared Scallops with Grapefruit Brown Butter Sauce

The local farmer’s market here sells fresh caught scallops and they are just SO good.  I know they can be a smidge pricey but I do like to indulge in them every few weeks.  When you purchase something that’s such high quality and make it in a way that honors the seafood, it’s totally worth it.’ve been pretty generous and listed this recipe for two because hey – if you love scallops as much as we do, I’m thinking you want quite a few on your plate.  But if you added another side to this meal (like a starch in addition to the vegetable), you could definitely get away with splitting it into three or four portions.

Now grab some scallops and get to cookin’, my friends!
